In Brazil, the "natural process" means ripe and raisin cherries are collected, cleaned, and seperated by weight at washing stations. The pre-drying process occurs under the sun betweeen 2 to 7+ days (farmers favor a full-sundried process whenever possible), and is finalized in mechanical driers, followed by 30 days of resting in wood boxes to homogenize the dry coffee. The sustainably grown and naturally proccessed beans reach their maximize flavor potential with a traditional roasting technique. A crowd favorite, this classic natural Brazilian Salmo has familiar mild notes of chocolate, molasses, and almond. It has gentle but balanced acidity, and a satiny-smooth mouthfeel, as aromatic notes of cedar surface in the finish.
